燒蚵殼是台南地區流傳久遠的傳統產業,十七世紀荷蘭統治時期即有灰窯工所的記載。而台灣數百年來漢人傳統磚石房舍之砌造,常以蚵灰調和糖水、糥米汁等原料製成俗稱「三合土」的黏著劑。

根據口述歴史得知,安平地區於數百年前已有灰窯存在,「灰窯尾社」因而得名。民國六、七十年代由於面臨現代化石灰工業大量生產的競爭,一座座的灰窯相繼停產拆除如今只剩安平蚵灰窯尚保存完整。台南市府乃規劃籌設「安平蚵灰窯文化館」,透過影像及文字記錄,將其生產流程記錄下來滿從而登升府城文化資產的保存視野及成效。

 

Oyster shell cement is the traditional industry which is long standing in Tainan. According to the historical records, oyster shell cement kiln craftsmen had existed in seventeen century since the Dutch occupa-tion period. Historically, chinese in taiwan in the past few hundred years built their bricks dwellings by using a special kind of cement "san-he soil" which contains oyster ash, sugar water,and gluti-nous rice.

According to local oral histories, the oyster shell cement kiln had existed hundreds An-Ping area and won the name if "community of oyster shell cement" (Hui-Yao-Wei-Se). The emerging modern industry of lime cement in 60s and 70s gradually made traditional oyster shell cement kiln dismantled or disap-peared in An-ping area.  Nowadays,there is only one oyster shell cement kiln left and well preserved. Tainan City Government,therefore,keep it and establish "Cultural Museum of An-ping Oyster Shell Cement Kiln" ,which record the whole production process of oyster shell cement by images and words. By this museum, we wish to boost the effects of conservation of cultural heritage in tainan.
